Livid.
Back in August the restaurant I work at fired the Sous. He was a toxic negative person…. Constantly complaining. The day after, I went to the Exec, (who hangs out there sometimes) and said what do you think…. Do I have the skills?
He said “ you are ready.”
So I went to the Head Chef (CDC) and said, “ I’m ready to step up since there is a vacancy.”
CDC went to her boss (Top Exec))and came back to me with “They’re not filling the position for cost reasons.” Other positions would cover the work.
Beginning of October they hired a new Sous. (Funny side note: his first Sous position 8 years ago was the last time I was a Sous…. He replaced me! We’ve had the same job.) I was promptly told he was being fast tracked to another restaurant manager position, he’d be temporary.
He lasted just over a week, he walked out on the day of the new menu roll out.
The next day the Head Chef was fired (* offered to be moved to another location and demoted),
So today I talked with the Exec about the Sous position…… apparently one of the other cooks approached the Top Exec directly and asked for the position at some point in the past. (Before August? I started asking the day after the old old Sous was fired.)

He’s getting the position….
That I was told it’s not being filled …. And it has now been filled twice.

I was offered ‘shift manager’ ….basically if there’s not other Sous/Jr.Sous/CDC around I’m ‘in charge’. Also I’ll be trained on the systems, so maybe sometime in the future I’d have a better chance at Sous.

Sous Chef. It a French term used in the culinary brigade system. It means ‘under’ … so the Sous Chef is ‘under’ the Head Chef or Chef de Cuisine. They’ll run the show day to day, do ordering and know how to run each station, and keeping everyone from stabbing each other.

The pay is ridiculously good and I actually get along with everyone
Also… on a positive note, I got noticed twice this week.
First was the Sous from one of the other locations. She hangs out for a drink at our place. She said she’s watched me work … and thought I WAS the Sous.
The second was by the guy described to me as ‘the most important person in the company you’ll come across.” He’s a Regional Director (or something) Wednesday was incredibly busy, more so than a Friday, (where we’d have more workers on)and it was just me and a kid that has less than a month of experience. We killed it. And he saw it.

Picked up the modules. Guy that answers the door is his roommate…… I guy I worked with when I was last a Sous. He had moved out of province years ago.

Some people think life is reality TV. Or a sitcom. I would have let it slide now, but once upon a time would have cared. My list of shit I give a shit about has gotten really tiny. (mostly stuff related to survival and distracting myself to avoid anxiety about surviving.)

Sounds like a stressful work environment all around. Down here, right now, you would have your choice of jobs in the food service industry. It might be a good time to shop around.

One of the reasons I am so happy with the company I am driving for, is the way they treat us and the east going environment at work. I could make more money but I like the place so much, it’s worth staying just because they seem to appreciate us as workers. I enjoy going to work and that’s kind of a rare place to be. Good luck on things.

I’ve got the modules installed and connected to the daw. Still need to setup the drum machine and the ‘auxiliary’ synths.
I’m getting a vibe from it already…. My choice of modules was fairly specific, it’s pretty lofi and grungy…. But there is a potential for more delicate synth sounds.
